I grew up eating Salmon croquettes. What is a croquette you might ask.
A croquette is a small breadcrumbed roll or patty made of ground meat, fish, mashed potatoes. Apparently they are often served with a bechamel or brown sauce but I never do that. Mine are sans sauce. 🙂 My Mom used to make them and I always loved them. She only made salmon ones. Come to think of it, I think crabcakes and crab balls are in the croquette family.
Here’s a recipe for Salmon Croquettes from Paula Dean.
