French-Style Meatloaf

This is adapted from Hallmark Magazine Feb/Mar 2009 issue

4 eggs
1 1/4 pounds ground chicken
1/2 c oats
1 carrot, grated
1 Granny Smith Apple, peeled and grated
4 scallions, sliced
1 1/2 t curry powder
Tiny bit salt
3 T Orange marmalade
1 T ketchup

Preheat oven to 350. Cover 3 eggs with cold water, bring to boil, remove from heat and cover for 12 minutes. Drain. Run under cold water and peel.

In large bowl combine chicken, oats, remaining egg, carrot, apple, scallions, curry and salt. Mix.

Spoon less than half into loaf pan. Make a length-wise trench down middle with your finger. Place hard boiled eggs lengthwise in trench.

Cover with remaining chicken mixture. Press down making sure eggs covered well.

In small bowl combine marmalade and ketchup. Brush it over loaf. Bake for 45 minutes. Let stand five minutes. Then pour off excess liquid. Gently turn onto plate and then re-invert. Cut with serrated knife.
